Did you ever see "Steel Magnolias"? Do you remember the scene at the wedding when they're cutting into the armadillo groom's cake, and it was red velvet cake? Ever wonder how to make that? Well, on page 152 of The Cake Mix Doctor by Anne Byrn, you can find out! This easy-to-use cookbook has recipes for cakes, biscotti, bars, cookie pops, and even tiramisu.My favorite recipe in this book is the turtle cake. It's so easy to make, and such a popular treat! I've brought it to cookouts and church council meetings, and it disappeared. It disappears even faster when it's warm!While there are "lighter" recipes in this cookbook, this book is not for the cholesterol conscious. Many of the recipes begin with adding a stick of butter to the cake mix. While it tastes delicious, the nutrition information is not provided.I use this cookbook often, especially when I need something tasty and quick. It's a great resource for those times when you just don't have the time or inclination to cook from scratch.
I used to pride myself on my baked goods and for years made all my cakes and cookies from scratch - in fact, I turned up my nose at cake mixes. But now, with an 11-month old baby, cake mix cakes are all that I make! You'll find many delicious recipes in this book, and most can be whipped up and in the oven in under 30 minutes. I find it easiest and quickest to bake the cakes in a tube pan, and make a simple glaze to drizzle on top. Most also freeze well, so sometimes I'll bake a cake in two loaf pans and store one in the freezer to have available later. I probably bake several cakes a month - to give as thank-you's, to welcome new neighbors, to bring to dinners at friends', for my husband to take to work. You'll also find that once you get the hang of making these cakes, you'll come up with your own combinations. Don't be afraid to deviate from the cake mix and pudding flavors suggested in the recipes. My favorite combination, one that I use in many of the recipes, involves Duncan Hines Golden Butter Recipe and Butterscotch pudding mix. One recipe that took me by surprise was the biscotti - so easy, and so delicious! My only complaint about the book is that Anne offers helpful hints (e.g., substituting pan sizes, add-ins for cakes, loaf pan ideas) that are sprinkled rather haphazardly throughout the book. I find myself marking these pages with little stickies so that I can find them easily. These are the top ten recipes that I've had the greatest success with, received many compliments on, and that I make over and over again: 1 Kathy's Cinnamon Breakfast Cake (try the DH Golden Butter / Butterscotch pudding combo here - it's fantastic!) 2 Orange Dreamsicle Cake 3 Chocolate Praline Cake 4 Biscotti (try DH Golden Butter with mini chocolate chips) 5 Orange-Cinnamon Poppyseed Cake 6 Lemon Buttermilk Poppyseed Cake 7 Banana Cake 8 Favorite Apricot Nectar Cake (try coming up with your own flavor combinations, such as Pineapple cake mix, Orange Jello, and Guava nectar) 9 Pineapple Inside-Out Cake 10 Amaretto Cake And some recipes I didn't like so much: Triple-Decker Strawberry Cake (tasted like Crunchberry cereal) Toasted Coconut Sour Cream Cake (just okay, not impressed) Incredible Melted Ice-Cream Cake (haven't had great success finding an ice-cream flavor that works well in this recipe) Chocolate Better Than ? The author has some very creative ideas for doctoring up a cake mix; everything from ideas for just adding one spice or extract to the mix all the way to totally transforming the mix into something else. There are even recipes for making cookies and cheesecakes out of cake mixes. I also like the information sidebars, one of which explained the pros and cons of canned vs. bagged, vs. frozen coconut. Very useful. Although I have not yet tried any of the recipes from this particular book, I have made several recipes from the cupcake book by the Cake Mix Doctor, including an espresso cupcake that my co-workers raved about. I like that she tells you to just forget canned frosting exists and make your own. The pan conversion section was very helpful so you know how long to bake cakes no matter what size pan you use. I have bookmarked lots of recipes in this book, and expect to get a lot of use from the book.
This is a book which should never have been adapted for the Kindle. The table of contents does not sync with the recipes and since there are so many and so much dialog about each one, it will be next to impossible to use. Because there are no page numbers on the kindle edition, you would have to try to guess if the recipe was somewhere in the beginning, middle, etc. Also the frosting recipes are not in the same place if you're lucky enough to find the recipe. I had seen the original copy of the book and it is excellent which is what made me order it. That, and the fact that it was on sale. However, I feel like I totally wasted my money on this. My review really only applies to the Kindle version. If it were possible not to give it any stars, I assure you I would. Just wanted to warn anyone thinking of ordering it for their kindle, do yourself a favor, DON'T!
I love a good cake, but I am WAY too lazy to make one from scratch. I also only own four cookbooks because most of them have way too many recipes I won’t use, plus there’s the internet. The great thing about this book is it’s the cheater’s guide to fake it from scratch cakes. In the beginning of the book the author explains that if you are making a cake that calls for pudding mix, don’t use a pudding in the mix cake (often the pudding flavor called for is different so you can’t just leave out the pudding mix).There are full color pictures of every cake and cookie in the front as well, so you can get an idea of what they look like to help you decide what you want to make. Each cake has a recommended frosting or glaze, and those are in a chapter in the back of the book.I usually have ingredients on hand for some of the easiest cakes, like the snickerdoodle cake. The banana pudding cake and blueberry muffin cake are also great. These cakes run the gamut, from chocolate to orange rum, so there is something for everyone’s taste in here.
